Every bottle of ELARIA begins in a single family grove in the hills south of Kaina, in Apokoronas, Crete. The trees are tended by hand and picked early each November, while the olives are still green. Each harvest is bottled once, preserving the unique character of that season.

What does ELARIA taste like?
Fresh, green and peppery. Our early-harvest Koroneiki gives notes of freshly cut grass, rocket, and green tomato, with a distinct bitterness and a peppery finish.
How should I use it?
Poured raw, over anything from bread and salads to grilled fish, soups, and pulses. ELARIA is at its best used raw or added at the end of a dish, where its grassy, peppery character comes through. Use it generously, and often.

ELARIA comes from a single grove in Apokoronas, Crete. One grove yields what it yields, so each harvest is bottled once and never repeated. When the year's release is gone, it is gone.
