The Oil

Where does ELARIA come from?

A single grove in the hills south of Kaina, in the Apokoronas region of western Crete, at around 226 metres, facing the White Mountains. The olives are Koroneiki variety.

What does it taste like?

Fresh, green and peppery. Notes of freshly cut grass, rocket and green tomato, with a distinct bitterness and a peppery finish. The marks of a young, early-harvest oil.

Why is it bitter and peppery?

Because our olives are picked early in the season, while the fruit is still green. Green olives give less oil but far more character. The bitterness and the peppery catch at the back of the throat are the marks of a fresh, early-harvest oil.

What is early harvest?

Most olive oil is made from ripe, black olives picked late in the season for maximum yield. ELARIA is picked early, in November, while the olives are still green. Less oil, more flavour. It is the less efficient choice, and the better one.

Is it extra virgin?

Yes. ELARIA is certified extra virgin by ELGO DIMITRA, a laboratory recognised by the International Olive Council, and assessed by an expert tasting panel.

Is it filtered?

Yes, absolutely. Filtering gives a clean, clear oil and helps it stay fresh for longer.

How should I use it?

Poured raw, over anything from bread and salads to grilled fish, soups and pulses. At its best used raw or added at the end of a dish, where its grassy, peppery character comes through. Made for the everyday table, used generously and often.

How should I store it, and how long does it keep?

Keep your ELARIA away from heat and light, with the cap closed. Extra virgin olive oil is at its best young, so open it up and enjoy!
